Simply put, we have found the UEFI Bios implementation of many X79 boards to be shockingly abysmal and almost deliberately obtuse/laggy to use especially during overclocking. Fortunately, ASUS is benefiting from the lessons learnt during their initial UEFI debut on previous generation P67/Z68 boards and have came out with a mature layout that is responsive to use.

We skipped the default EZ-mode and used the Advanced Mode which we think most of our readers will be more interested in.
